Bacteria are microscopic living organisms, often referred to as germs, that exist almost everywhere in the environment. They can be found in soil, water, air, on surfaces, on our skin, and naturally in many foods. While the majority of bacteria are harmless or even beneficial, some can cause food poisoning and serious illness if food is not handled, stored or prepared correctly.

Understanding how bacteria grow is one of the most important aspects of food safety and helps food handlers reduce the risk of contamination.

What Are Bacteria?

Bacteria are single-celled microorganisms that are invisible to the naked eye. They play an important role in nature and many are beneficial to both humans and the environment.

Examples of beneficial bacteria include those used to produce:

  • Yoghurt
  • Cheese
  • Fermented foods

Beneficial bacteria also live naturally within the human digestive system, where they help digest food and support a healthy immune system.

Temperature is one of the most important factors affecting bacterial growth.

Harmful bacteria multiply most rapidly within the temperature danger zone, which is generally between 5°C and 63°C.

Keeping food outside this temperature range helps minimise bacterial growth.

Cold Temperatures

Refrigeration does not normally kill bacteria, but it significantly slows their growth and reproduction.

Freezing stops bacteria from multiplying, although many bacteria survive freezing and become active again once food is thawed.

High Temperatures

Cooking food thoroughly to the correct internal temperature destroys many harmful bacteria and is one of the most effective ways to prevent food poisoning.

Always cook food thoroughly and follow recommended cooking temperatures.

Foods That Support Bacterial Growth

Bacteria need nutrients to survive and multiply. They grow particularly well in foods that are rich in protein and moisture.

High-risk foods include:

  • Raw and cooked meat
  • Poultry
  • Fish and seafood
  • Milk and dairy products
  • Cooked rice
  • Prepared meals
  • Ready-to-eat foods

Foods containing high levels of salt, sugar or acid are generally less suitable for bacterial growth. This is why preservation methods such as salting, sugaring and pickling have been used for centuries.

Do Bacteria Need Oxygen?
